On Friday the 13th, Agave Culinary led by Chef Mariano Balderas takes over the Culinary Studio for Loteria del Mar—a minimalist, high-skill exploration of Baja gastronomy. We are stripping away the cliché to focus on three pillars: Technique, Iconography, and Sea.
